The Welsh musician, 35, composed Ubi Caritas for the couple to walk down the aisle to.
Speaking to The Press Association he said: "It's been a whirlwind year which started back last November when I was contacted by the palace because they wanted to include one of my pieces in the royal wedding and almost a year later my CD has come out.
"I think the amount that I owe William and Kate, the Duke and Duchess, is huge - it's unbelievable.
"To choose a composer just because they like the music and not one of the big names - not established - is something that has changed by life completely."
Paul told the www.dailypost.co.uk that he attended rehearsals for the wedding in Westminster Abbey but watched the event itself on TV with his parents on Anglesey.
After the event the couple wrote to thank Paul and sent him two pieces of wedding cake.
"It has a photo of William and Catherine on it. I quite fancied eating it, but I gave it to my mum," he told the website.
His CD A Tender Light is dedicated to the Royal couple with their blessing. It was released by Decca Records last week.
