The denial comes just days after Willerton, 21, claimed they were a couple after they left the jungle, even sharing a kiss shortly after they were voted off the reality television show.
Speaking to the Mail Online, Essex said: "We never had a relationship anyway, we were never a couple, we just really got along in the jungle."
His admission follows an interview model Willerton gave to The Sun on Sunday, in which she said media pressure forced the couple to split up, as they didn't want to be labelled as the "next Katie Price and Peter Andre".
She continued: "I want a real, normal relationship where everything happens naturally and you are just allowed to be.
"I didn't want to be the next Katie Price and Peter Andre. And I gradually realised that could never happen for us."
Discussing how their relationship developed after leaving the jungle, the model admitted: "Joe changed when we left the jungle. He was more of a man than a boy, and I was like 'wow'.
"We spent the rest of the time in Australia engulfed in each other. We kissed for the first time in his bedroom after the show wrap party and we spent the night together."
She then said their relationship came under strain once they returned to the UK.
