According to RTÉ, the new mum was driving from her home in Co Carlow, Ireland, to the hospital when she went into labour.
As a result, the woman ended up crashing her car into a roundabout at around 7.30pm just outside of Kilkenny city.
It is understood there was heavy fog in the area at the time.
A number of passers-by stopped to help, including Eamonn Doyle and his wife Mae.
Speaking to RTÉ, Mrs Doyle said: "The driver's door was opened and the lady was leaning over in the passenger seat, and she just said to me 'catch my baby'. And I put down my two hands and I caught her baby."
The couple then found a blanket and secured it around the baby. They waited with the pair until an ambulance arrived at the scene.
Mum and baby were taken to St Luke's Hospital in Kilkenny. They are both said to be "doing well".
